I was making a profile on an on-line service for restaurant reviews the other day and the question was asked what food for my last meal? I put cheese without thought. Cheese is wonderful in so many ways. So much peasants’ food.

In the U.S., many rich cheeses like Brie, Camembert and triple crèmes like Pierre Robert are too buttery and lack a distinctive kick of flavor.
